Winter Salad

I host a cookbook club at my local library and last month the theme was Pumpkin cookbooks. I made this awesome Pumpkin Vinaigrette from the Pumpkin Lover's Cookbook and added a winter inspired salad to it. It got rave reviews! Check it out:


Pumpkin Vinaigrette

1/2 cup pumpkin puree

1 Tbsp. lemon juice

1/4 cup white or apple cider vinegar

1/2 cup olive oil

1 1/2 Tbsp. brown sugar

1/8 tsp ground nutmeg

1/4 tsp ground ginger

salt and pepper to taste


Combine all ingredients in a Mason jar and shake well.


The salad:

Note: I am not a measurer unless its for baking so these are all estimates, adjust as you like.

1 (5 oz.) container of spring mix or arugula

1/4 cup of sliced almonds, walnuts, or pistachios (whichever you prefer)

1 kid size box of golden raisins

1 celery stalk sliced

1 green onion sliced

1/2 cup pomegranate seeds

1/2 of a sliced green apple.


Toss salad with about half of the mason jar dressing. I had some dressing left over to use for the next day! Enjoy.
